Believe me, I get it – this sounds like a gimmick. But it works. The cayenne pepper plays well with cinnamon and ginger, already known players in classic pumpkin pie filling, and adds just enough kick to announce its presence without overwhelming your taste buds. A little chicken fat adds umami to the crust (although you can use all butter; see variation below) and honey helps bridge the savory-sweet gap between the herbs and sweet pumpkin filling. It is sweet, creamy and strangely refreshing – exactly what you need after the big holiday meal. But if you really hate the spice, leave it out altogether and you still have a classic pumpkin pie recipe to stand the test of time – and craze – years.

To be sure, buy a new container of cayenne pepper to ensure that the cake gets the characteristic Nashville hot chicken kick. Do not lose the whipped cream on top – its richness perfectly balances the warmth of the filling. And although it is an extra step, blind crust baking here is essential for getting crispy, flaky dough along with a proper custard-like filling.

Nashville Hot Pumpkin Pie
2 hours, plus 1 hour of hands-off. Makes two 9-inch cakes.

  • 3 cups all-purpose flour
  • ¾ cup (1½ sticks) unsalted butter, diced and cooled
  • ¼ cup melted chicken fat, frozen
  • 2 tablespoons granulated sugar
  • 2½ teaspoons kosher salt
  • 1 can of pumpkin or sweet potato puree (15 grams)
  • 2/3 cup packed light brown sugar
  • 2 tablespoons honey, plus more for serving
  • 1 tablespoon cornflour
  • 2 teaspoons of ground cinnamon
  • 2 teaspoons of ground ginger
  • 1 teaspoon cayenne pepper, plus more to garnish
  • 2 large eggs
  • 1 can of evaporated milk (12 ounces)
  • 2 cups of cooled heavy cream

1 Combine the flour, butter, chicken fat, sugar and 2 teaspoons of salt in a food processor and pulse 10 times until the butter is the size of peas. Add ½ cup of ice-cold water and pulse 4 or 5 times quickly to moisten the crumbs, but do not combine the dough. If the dough appears to be dry, add 1 to 2 tablespoons of ice cold water and pulse to combine. Place the dough on a clean work surface and press gently until it starts to stick together. Shape the dough into a ball, divide it into two and shape each half into a disc. Wrap the discs separately in plastic wrap and store them for a minimum of 1 hour or a maximum of 2 days.

2 On a floured work surface, roll each cooled dough disc to inch-inch thick. Transfer each to a normal (not deep dish) 9-inch foil or light-metal cake pan, leave a 1-inch overhang and cut off the excess. Fold the overhang under itself so that it forms a thick edge that is flush with the edge of the pan. Crimp the edge with a fork or with your fingers. Place the cake tins in the freezer and let them cool for at least 20 minutes until they are firm.

3 Heat the oven to 375 degrees. Tear off 2 sheets of parchment paper, stuff them each into a ball, and then roll them out. Place a sheet over each frozen pie bottom and fill them to the top with pie weights (you can also use raw rice or dried beans). Place both crusts in the oven and bake them halfway through the cooking until the edges turn slightly golden brown, about 25 minutes. Remove the parchment paper sheets and weights and keep baking the crusts until the bottom is light brown, about 10 minutes more.

4 Meanwhile, beat the pumpkin, brown sugar, honey, cornflour, cinnamon, ginger, cayenne pepper and the remaining ½ teaspoon of salt in a large bowl until smooth. Beat the eggs and then the evaporated milk. With the cakes still on the oven racks, pour half of the filling (2 cups) into each crust. Close the oven and bake until the center of each cake fluctuates slightly when the pan is tapped on the rim, about 35 minutes. Transfer the cakes to a rack and let cool completely.

5 Beat the cream until stiff peaks in a large bowl until 2 hours before serving. Spread half the cream evenly over the top of each cake and lightly sprinkle with more cayenne pepper. Serve each slice with a dash of honey if you want.

All-butter crust variation:
No schmaltz? No problem! Nix the chicken fat and use a total of 1 cup (2 sticks) unsalted butter.
