Famed nutritionist and dietitian Susie Burrell shared the recipe on Instagram, much to the delight of her fans, who agreed they looked “delicious.”

A dietitian has revealed her recipe for ‘super colorful’ mini vegetable quiches for the home – and they’re perfect for breakfast or lunch.

The recipe calls for eggs, cream, Parmesan cheese, parsley, spinach, mozzarella, butter, garlic, a leek, bell pepper, and some bread.

Susie, the mother of twin boys, makes the quiches in muffin trays for easier serving.

First, she preheats her oven to 180C before drizzling oil on her muffin trays and placing a round piece of bread in the bottom of each ‘hole’.

She then melts the butter in a pan where she cooks the leeks and garlic for about three minutes until soft.

She then adds the bell pepper and spinach and cooks for two minutes until the spinach has wilted.

Susie then spreads the vegetable mixture evenly in the muffin tin and sprinkles them with mozzarella.

Then she combines the cream, eggs, parsley, salt and pepper and pours it over the top of her vegetables.

She tops each of the quiches with Parmesan cheese before putting them in the oven for 20 minutes.

Her fans were quick to say how easy the recipe looked.

“Love the bread base idea, I’m going to try them next week,” a mother promised.

The recipe makes 18 of the mini quiches, Susie revealed in her recipe.
