A popular foodie has dropped his “best recipe card yet,” a version of spicy Mexican chicken that he promises will change taco Tuesday forever.

The home cook, who runs a Slow Cooker Recipes and Tips page on Facebook, shared the recipe Tuesday night, inspiring fans to give it a try.

The Mexican feast of chicken, beans, crushed tomatoes, salsa, and taco seasoning feeds eight people and can be made by anyone with a slow cooker.

To make the shredded chicken, the home cook cuts his chicken breasts into three pieces before placing them in the bottom of his slow cooker.

He then adds the rest of the ingredients and stirs them gently so as not to disturb the chicken at the bottom of the pot.

After six hours, he shreds the chicken with his fork before serving.

A photo from the Mexican feast shows the slow-cooked chicken served alongside soft tacos, taco boats, salad and salsa.

But he said it “can be served with anything.”

How can I make this Mexican shredded chicken at home?

INGREDIENTS

6 skinless chicken breasts

1 regular can of red kidney beans, rinsed and drained

1 large can of crushed tomatoes – about 800g

Mild taco seasoning (the sachet)

2 jars of mild salsa

METHOD

Spray a large slow cooker with olive oil so the chicken doesn’t stick

Cut the chicken breasts into three pieces and place them in the bottom of your slow cooker.

Sprinkle the taco seasoning over the chicken.

Spoon all the kidney beans on top and then add the crushed tomatoes.

Tip both jars of salsa over the top of everything else.

Gently stir the top sauces together, but don’t move the chicken from the bottom. Basically just mix some crushed tomatoes with salsa.

Cook on low for six hours.

Stir vigorously and pull the chicken apart with two forks – it will just fall apart. Serve with your favorite sides.
