Belinda Norton, a Gold Coast gym teacher, said her quick meat-free recipe “gives the body a boost” and “increases energy and gut health with its fiber-rich nutrients.”

Recipe: How to make Belindas Booster Burgers

ingredients

1 can of lentils drained

1 pack of brown fast rice

1 egg

2 teaspoons curry paste – I use yellow curry (this amount is very mild) add more if you like it spicy.

1/3 cup pumpkin seeds

1/2 cup flour (any) I used spelled but rice or plain

1/2 cup almond flour

Salt pepper

Method

1. Mix all ingredients in a small bowl.

2. Pack a handful of roll into large balls.

3. Heat two tablespoons of olive oil in the pan and turn and brown on each side

4. Remove from heat and let cool on a plate.

5. Prepare either a salad of fresh vegetables, shredded beetroot and vegan mayo or place between gluten-free bread or burger-style wraps

To make the burgers, Belinda mixes lentils, a packet of brown rice, an egg, curry paste, pumpkin seeds, flour and almond flour into a mixture.

She then rolls the mixture into large balls before heating olive oil and browning each burger on each side.

When ready, let them cool on a plate before preparing a salad of fresh vegetables, grated beetroot and vegan mayonnaise.

The burgers can also be served between bread or in a wrap and will keep for a week in the fridge.

Belinda firmly believes that the secret to true wellness is routine and consistency, because no matter what happens in your life, you know you have some non-negotiables that you will always fit in.

“As a working mom, when I didn’t have a set routine, it was my biggest fallout,” Belinda wrote of her website.

“Having a daily routine has been proven to reduce stress,” explains Belinda.

“We tend to fill our brains with our ‘to-do list,’ and this can be incredibly overwhelming as it repeats itself in a loop in our mind.”

When you write down your list, the PE teacher recommends putting it in a visible place for your whole family to see, so everyone knows what needs to be done.

If you can, make a good routine of preparing a healthy snack, meal, or granola every Sunday.

This means that you are much less likely to reach for something unhealthy if you are tired during the week and have little time.

Finally, Belinda revealed that having a solid exercise or training regimen will keep you “motivated, mobile and aligned”; she does 30 minutes strength three times a week

“Add in stretching and some fun and passion-filled outdoor fitness activities to create a really balanced body routine,” Belinda said.
